The Mission of the San Francisco Department of Public Health (SFDPH) is to protect and promote the health of all San Franciscans. SFDPH strives to achieve its mission through the work of two main Divisions - the San Francisco Health Network and Population Health. The San Francisco Health Network is the City’s only complete system of care and has locations throughout the City, including Zuckerberg San Francisco General Hospital and Trauma Center, Laguna Honda Hospital and Rehabilitation Center, and over 15 primary care health centers.

Role description

Under supervision, performs a variety of tasks in connection with the preparation, storage and serving of foodstuffs, including dietary foods; may supervise a small group of Food Service Workers in an assigned food service activity; ensures that assigned dining and kitchen areas and equipment are kept clean and in good repair; and performs related duties as required. Essential functions include:

  1. Sets up food stations, counters and tables for food service per policy and procedures. 
  2. Assists in the preparation regular and diet food including standard formulas and delivering bulk nourishments to the wards, using specialized equipment connected with nutrition services and special diet stations.
  3. Assists cooks in basic food preparation by light cooking; panning up food; and prepping food items. 
  4. Assists in the preparation of food products by measuring and weighing appropriate amounts of ingredients called for by the recipe utilizing scales and measuring tools, and converting measurements as needed. 
  5. Serves food to customers and patients in cafeterias, dining halls and hospital wards. 
  6. Serves food using designated portion control utensils by properly selecting appropriate equipment/utensils during meal periods. 
  7. Maintains daily supply of serving utensils & items needed for service.
  8. Performs routine auxiliary tasks such as carrying supplies to and from storage rooms; controlling the use of meal cards and distributing linen supplies. 
  9. Assembles patient's meals by reading menus which indicate dietary requirements and selects appropriate food items for delivery. 
  10. Lifts 50 lbs. of foods in bulk (e.g., flour, sugar, beans, potatoes, etc.) and transports to storage area; Lifts hot trays or pans of 40 lbs. with prepared foods to the tray line to prepare patients food tray.
  11. Handle cash appropriately by verifying the cash register; keying in accurate charges; making change accurately; accepting valid meal tickets/passes; and reconciling totals. 
  12. Receives, stores and issues food and supply items according to invoices, requisitions, and other guides by verifying quality and quantity of all items received and issued. 
  13. Works in locations such as the freezer, refrigerator, dry storage, chemical storage, and loading dock areas using pallet jacks, hand trucks, and/or flatbed carts. 
  14. Maintains department sanitation by washing and sanitizing {pots, pans, griddle, steam kettles, ovens, hoods, drains, carts, dishes, utensils, storage spaces, equipment, food containers, tables, and other areas when required]
  15. Maintains cleanliness of work areas by utilizing cleaning and sanitation chemicals that are potentially hazardous such us sweeping and mopping floors, wiping walls, cleaning all kitchen equipment, etc. follows established garbage, compost, and recycling programs.
  16. Maintain cleanliness of cookware and utensils by removing and disposing of food and other waste; sanitizing using the dishwasher and organizing on drying racks.
  17. Acts as lead worker or team leader to a small group of food service workers by setting up the tray line and clean-up operations.
  18. Gives oral & written instructions and demonstrations to promote satisfactory performance. 
  19. Trains new food service workers in the performance of their tasks and orients them on department policies and procedures.
  20. Observes the workplace to ensure safe practices are carried out and reports any unsafe or unsanitary conditions to immediate supervisor or other supervisory/managerial personnel.
  21. Assists in preparing and documenting daily reports by recording temperature checks for food & equipment; checking inventory sheets, payroll sheets and sanitation checklists; and completes other departmental reports as assigned.
  22. Replenishes food supplies and monitors supply levels which includes: preparing requisitions for supervisor’s signature; ordering food and non-food products; and issuing requisitioned items.
  23. Schedules and assigns (with supervisor's approval) duties to meet meal schedules and inspects their work to maintain department standards.
  24. Checks the tray line which includes: verifying the completeness of all necessary items on the tray, proper appearance of the tray, proper placement of items and condiments on the tray while maintaining appropriate speed of the tray line.              

How to qualify

EDUCATION: Possession of a high school diploma or equivalent;

AND

EXPERIENCE: One (1) year of work experience in the operation of a large, high-volume food service organization. Experience includes tray line operations, quality control, cafeteria/catering services, inventory management, or equipment monitoring in an institutional setting such as a hospital, correctional facility, cafeteria, long-term care facility, or other large high-volume food service organization.

Note: One year of full-time employment is equivalent to 2,000 hours (2,000 hours of qualifying work experience is based on a 40-hour work week). Any overtime hours that you work above 40 hours per week are not included in the calculation to determine full-time employment.

Selection Procedures:

After application submission, candidates deemed qualified must complete all subsequent steps to advance in this selection process, which includes the following.

Minimum Qualification Supplemental Questionnaire (MQSQ): Candidates will be required to complete an MQSQ as part of the employment application. This MQSQ is designed to obtain specific information regarding an applicant's experience in relation to the Minimum Qualifications (MQ) for this position. The MQSQ will be used to evaluate if the applicant possesses the required minimum qualifications.

Multiple Choice Examination: (Weight: 75%): Candidates that meet the minimum qualifications will be invited to participate in a Multiple Choice exam that is designed to measure the knowledge, skills, and abilities in job related areas including, but not limited to: Knowledge of Sanitation and Safety Regulation Procedures; Interpersonal, Communication, and Customer Service; Critical Thinking and Food Preparation.

If you also apply and meet the minimum qualifications for the 2604 Food Service Worker recruitment (CBT-2604-H00091), you will only be scheduled once for the Written Core Food Service Worker Examination.

Written Senior Food Service Worker Subtest Examination (Weight: 25%): Candidates will be administered a written multiple-choice test designed to measure knowledge, skills and/or abilities in job-related areas which may include but not be limited to: the ability to give oral/written instructions, assign duties and tasks to subordinates, oversee and inspect the work of others, and the ability to operate a personal computer including basic word processing functions.

Candidates must achieve a passing score on both the Core and Subtest Multiple Choice examinations in order to continue in the selection process and will be placed on the confidential eligible list in rank order according to their final score.

This is a standardized examination; therefore, test questions and test answers are not available for public inspection or review.

Additional selection processes may be conducted by the hiring department prior to making final hiring decisions.

Exam Score Results/Banked Scores:

The score you achieve on this examination shall be valid and "banked" for three years, starting from the date of the examination. This means that, during this three-year time period, you will not be required to take this test again should you apply and be found eligible for a future announcement for which this particular test is used. If the test for this future announcement is held within one year of the date of this examination, your score will be automatically applied to that announcement. However, after one year, you have the option to either (a) apply your test score to the other announcement or (b) retake the test. Re-testing is permitted no sooner than one year from the date of the examination and only in association with your eligibility for another announcement for which this test is used. Please note that, should you re-test, your re-test score would become your official score since it is the most recent (even if it turns out to be lower than your original score). Candidate scores on this examination may also be applied to other announcements involving other job titles, when directed by the Human Resources Director.

Certification:

The certification rule for the eligible list resulting from this examination will be the Rule of 10 Scores.
