This is a Citywide Examination under Class-Based Testing (CBT). The eligible list resulting from this announcement will be used to fill vacancies in this class.
Role description
Under general supervision, the 2654 Cook performs skilled duties in the preparation and cooking of large quantities of a variety of foods; and performs related duties as required. Essential duties include but are not limited to:
- Follows prescribed menus and recipes to meet nutritional guidelines and special dietary needs.
- Prepares and cooks a large quantity and variety of food including special diet items commonly found on the menus of institutions.
- Orders food and kitchen supplies.
- Follows food safety standards and practices.
- Forecasts the amount of food and supplies needed and communicates needs with the management and chefs.
- Directs and assists in the cleaning and maintenance of kitchen equipment and utensils.
- Develops standardized recipes with Nutrition Professionals.
- Follows instructions and performs tasks according to established methods and procedures.
- Prepares and maintains accurate records and reports.
- Plans and executes kitchen procedures for productivity.
- Supervises and directs food service staff in the performance of their duties.
- Utilizes standardized recipes.
- The Cook also performs other related duties as assigned/required.
How to qualify
MINIMUM QUALIFICATIONS (required):
① Education: Possession of a high school diploma or equivalent (GED or High School Proficiency Examination); AND
② Experience: Three (3) years of work experience cooking large quantities of food in a setting such as a hospital, correctional facility, the military, hotel, restaurant, or equivalent food service establishment.
- Note: Coffee shops, small grab-and-go kiosks, and sandwich shops are not considered qualifying cooking experience.
- Substitution: One (1) year of the required experience can be substituted by any of the following:
- completion of a one (1) year culinary arts certificate program; or
- completion of an apprenticeship program certified by a nationally recognized culinary arts organization; or
- possession of an Associate’s degree in culinary arts.
Applicants must meet the minimum qualification requirement by the final filing date unless otherwise noted.
One year of full-time employment is equivalent to 2000 hours. (2000 hours of qualifying work experience is based on a 40-hour work week.) Any overtime hours that you work above forty (40) hours per week are not included in the calculation to determine full-time employment.

Selection Procedures
After application submission, candidates deemed qualified must complete all subsequent steps to advance in this selection process, which includes the following.
Minimum Qualification Questionnaire (Weight: Qualifying): Along with this application, applicants must complete a questionnaire (linked above), which is designed to compare an applicant's experience with the Minimum Qualifications of this position.
In-person Written Examination (Weight: 100%): Candidates who meet the minimum qualifications will be invited to participate in an in-person written multiple-choice examination designed to measure their relative knowledge, skills, and abilities in job-related areas. The multiple-choice examination component may include, but is not limited to: knowledge of kitchen operations and kitchen preparations; knowledge of food safety, storing, and sanitation; knowledge of basic mathematics; knowledge of the use, care, and cleaning of a variety of kitchen equipment; and the ability to maintain accurate records and prepare simple reports.
Candidates must achieve a passing score on the written exam in order to continue in the selection process and will be placed on the confidential eligible list in rank order according to their final score.
This is a standardized examination; therefore, test questions and test answers are not available for public inspection or review.
Additional selection processes may be conducted by the hiring department prior to making final hiring decisions.

Certification: The certification rule for the eligible list resulting from this examination will be the Rule of Ten Scores.

The duration of the eligible list resulting from this examination process will be twelve (12) months and may be extended with the approval of the Human Resources Director.
